A friend of a friend who is THM sent us this recipe and it is amazing, but wanted to double check that I am not totally sabotaging myself. What do you think?
2 c. almond flour 1/2 tsp. baking soda 1/4 tsp. sea salt 1/4 c. butter 2 T. honey pinch of stevia (my addition) 1 T. vanilla 1/3 c. Lilly's sugar free chocolate chips (she uses 1/2 c. 60% cacao)
I get 12 cookies out of this batch. She calculated 14-15 cookies.

The honey might not be a good idea. If you get 12 cookies you are getting 1/2 tsp honey per cookie. You might be tipping a bit over your S carb limit.

You would want to sub out the honey unless you are going for a Crossover or not in weight loss mode

Got it! That makes sense. I need the moisture, so I could sub more butter or add a couple T. of coconut oil. Eggs are always an option; however, my 12 yo DD loves these cookies. Maybe a flax egg? Definitely add a couple doonks of stevia to the mix. I'll play around and let you know how they turn out!
