Every time I make cookies where the recipe calls for "a well greased cookie sheet" (ex. Peanut butter chocolate cookies on page 387) I end up setting the smoke alarm off because whatever I have greased with is burning before the cookies are baked. I've tried lots of different things for greasing the pan with the same results. Any ideas?

I use parchment paper and then I don't have to grease my pans.

Parchment is awesome, I have used a bit of refined coconut oil or coconut oil spray as well
