I practiced with a few of the recipes last night - made the muffin in a mug and the bread in a mug. I figured out pretty quickly that I need to cook them 30-60 seconds longer, probably due to our altitude. But they both had kind of a funky smell that was difficult to ignore when eating. At first I thought it was the coconut oil - I used this odd bottle of coconut oil my husband impulsively bought at the Indian-food store a few months ago. It does tend to have a funny smell but I figured it wouldn't matter once it was cooked. I also wondered if I have the wrong kind of flaxmeal - I bought Bob's Red Mill Whole Ground Flaxseed Meal at Walmart - I didn't see Golden anywhere.
But then I tried the Lemon~Coconut Muffin/Cake in a Mug from countingalljoy.com - no coconut oil or flaxseed meal in that though I subbed almond flour for the coconut flour. And it still mildly had that funky smell! So now I'm wondering if it's the almond flour, although it doesn't seem to smell in the bag?

I'm not sure, some people seem to really like the almond flour, but I actually totally prefer to use all flax in my MIM or BIM. And yes, most of us use the golden flax.
