My DH and I love Mexican food! We lived in Mexico for 2 years and our neighbor was an excellent cook. She would start cooking their dinner at 8 p.m. and the awesome smells would waft over and make us so hungry. Thankfully she invited us over often One of our favorites was chilies rellenos, and it is so quick and simple, yet the flavors are amazing. We make them at home and I realized they're a perfect S meal. You simply stuff a whole green chile (anaheim or poblano) with monterey jack cheese and heat it up in a small skillet. Mix up a couple eggs and pour it over the chile. You can scoop the eggs up over the chile as they cook. Once the eggs are cooked and the cheese melted you're done! Serve with hot sauce. The little tiny cans of green chilies are terrifically expensive at the grocery store, but we buy them in a big #10 can at our local Cash & Carry for only around $5.50. I freeze them four in a bag so they're quick to thaw and always handy. Just wanted to share one of my favorites!

oh, this sounds great, and chiles rellenos are one of my favorites too - this is definitely going on my "to try" list!
