I am thinking about making a Thai vegetable soup with homemade chicken broth (water and chicken), boneless skinless chicken breasts, fresh ginger and lemongrass, asparagus, squash (yellow and zucchini), green onion, green beans, broccoli and unsweetened coconut milk. Does this in any way fit into the diet? The vegetables, although non-starchy, do have carbs- and the coconut milk (1 can) is higher fat. Could this squeeze into the diet as an S? It isn't especially high calorie, but does kind of combine fat with carbs, right? We are really wanting this soup, and I'm trying to make it fit.  ?. Thanks for any input!!

This will fit very nicely into an S category. I'm just wondering if you have a protein to go with it? Are you adding the chicken? If not finding a protein source for your meal is important.

I see now that you added the chicken. The carbs in the veggies are minimal and we do not count the carbs in them.

Oh, thank you so much, Susieq! I get confused about the S meals so have been really limiting vegetables with them (other than cauliflower which seems to be a main faux potato ingredient in some recipes). We were really wanting the Thai soup, but the coconut milk added a fat, so I was confused. Thanks for clearing that up for me!

Oh yes enjoy those non-starchies, there is a good list at the end of the S chapter, lots of veggies to enjoy in S
