This is an ice cream recipe I've been playing around with, very loosely based on Briana Thomas' cottage cheese/almond milk based one. The measurements are all approximates. Basic Ice Cream (S)
2-3 cups ice cubes 1 cup almond milk 1/2-3/4 cup heavy whipping cream 4 oz. cream cheese 3/4 tsp. glucomannan 2 scoops vanilla protein powder Dash of vanilla Stevia or other on-plan sweetener to taste (I like mine fairly sweet) Blend very well in a blender. Since I don't have a ice cream maker, I put it in a baking pan and froze it, stirring every 15 minutes or so until it was the right consistency. If you have one though, I would recommend using that instead, and use less ice cubes. This makes enough for about 3 people. This is just my base recipe. I like to add peppermint essential oil and chocolate chips for Chocolate Chip Mint ice cream, or drizzle melted chocolate and add clumps of peanut butter for Moosetracks, once again basing it off of Briana Thomas' version. Just recently I made a Strawberry Cheesecake version, which is the one pictured. Enjoy!
