Since spelt is found in the Ezekiel bread and from what I have found, it appears to have a lot of carbs in it, are other recipes with spelt plan approved? I found some recipes from the spelt manufacturer (?) that I would like to try, but I am not sure if this is a good idea because of the carbs. Thanks in advance for any help.

As long as you are using it in a sprouted or soured form, and within the portion sizes for bread/grains, it is fine.
