Almost hate to ask this (it might just really show my VERY southern roots!), would a small amount of bacon drippings/grease used as seasoning be acceptable as a fat in an S meal?
Last night I made cabbage. A scant tsp of bacon drippings. In it, I sauteed one small onion and cabbage. Seasoned with garlic, salt, red pepper flakes and a sprinkle of Truvia. Soooo good!! Ate it with salmon, steamed green beans and a side salad.

I love me some bacon grease to season things. I would call it acceptable because it is solid at room temp. But it would take a lot for me to give up something so handy, cheap and tasty.

oh, maybe you mean E meal with that scant tsp? i like bacon in S, and a couple tablespoons farm fresh tess!
