Trim Healthy Iced Cappuccino: I used a Vitamix for this recipe Makes 1 large serving
1/2 cup - brewed coffee (hot works fine) 1/2 cup - cottage cheese 2 tbsp - heavy cream 2 tbsp - Gentle Sweet 1 tsp - Truvia 1/8 tsp - Gluccie (optional) dash of extract of choice (optional) I like to use hazelnut or vanilla 14 ice cubes
Directions:
1. Blend coffee, cottage cheese, heavy cream, sweeteners, optional extract, and optional gluccie together till smooth. 2. Taste and adjust if you feel the need. 3. Add ice to blender, and blend together till smooth. (You may need to stop the blender and stir by hand a few times to get things moving again, since it gets a bit thick with the amount of ice in it. It may depend on the power of your blender.) 4. Enjoy!
Notes: I have tried this recipe using just one tablespoon of cream, or omitting it all together, and it still tastes just fine for a FP. I do enjoy the two tablespoons of cream in this the best though.
