Thank you to the authors for all of their research done to put THM together! I know you have put a lot of different nutrition info together to come up with the plan, so my question is the following: I think you suggest low-fat dairy to help with weight loss, but I have read that eating the real products, unaltered, is best. Do you believe this at all? What exactly makes you believe that the altered products are totally acceptable? Is it that the health benefits of maintaining a trim weight outweigh any negative consequences?

How could there be negative consequences when it is only natural to have skim dairy products? I know there is much talk about keeping dariy in its unaltered state these days but that simply is not Biblical. It is more of a modern belief. Butter was a Biblical food and therefore so was skim diary. They surely would not have made butter then thrown away the good milk that was left. No, in that day they fermented it and it was a big part of their diet. There is also much talk about always keeping fat with protein but again this is just "man talk" not God talk. Sure we have many meals that include both but not all meals have to be that way. Take white fish for instance, some of it has zero fat yet lots of protein. Jesus fed the five thousand with such fish and loaves (sourdough loaves more likely). Chicken breast is another natural low fat, high protein food. God made all types of macronutrient ratios in foods He designed for us to eat.
God is a creative God and he gave us very creative brains. If we do not alter foods at all for fear of changing them, that's not utilizing our creativity. Sure, we do not advocate white bread or refined sugar but many foods and beverages like coffee grounds, fermented foods, wine, cheese - all have been changed from their original form in some way. Supplements are extractions from foods - these are good things in our opinion as is whey protein as it provides the highest source of glutathione to our bodies out of all other foods.
If protein is always eaten without fat, yes there could be some depletion of vitamins but on our plan there is ample fat in many meals. A natural high protein, low fat meal now and then is simply a good change up for your metabolism and just as Biblical as a higher fat meal.

For me, I have no issue with eating low fat dairy because I see with my own eyes the way our raw, farm milk separates, practically inviting me to use the cream and milk separately. Both are important, but not necessarily together. The problem I have with low fat dairy is just that in some cases, there are weird ingredients added to make them.

Yes, I was referring to store-bought dairy, but maybe whatever is added is not problematic, even if it is not naturally there in skimmed raw milk.

I'm not completely convinced about the added ingredients, but I am not overly impressed by what I see added to grocery store full-fat dairy, either. Grocery store whipping cream here has SEVEN ingredients!!
