I really love Kale and it took me a lot of tries to get a version of Kale Chips that didn't overcook, taste bad, etc. So I thought I'd share my version. 1 large bag pre-washed kale (you could always wash and do the bunch) Olive Oil Nutritional Yeast Sea Salt (I have a garlic and sea salt grinder I got at Sam's which is great for these) Lemon Juice Parchment Paper I do 2 batches because the big bag is just way too much to do one, the kale won't cook evenly. Put half the bag(make sure you remove the hard stem pieces) in a or ziploc and drizzle generously with olive oil. I add about 1 teaspoon of lemon juice. Then sprinkle generously with nutritional yeast. Add salt and garlic to your preference. Massage this in really well, either with your hands or in the ziploc baggy. Spread onto a parchment lined baking sheet and bake at 350 for 15-20 minutes. I usually stop at 15 minutes because I like a few softer pieces. I have done 300 degrees for 20 minutes and that works for a crispier version. Repeat with the other half and you have a bunch of yummy kale chips! You could always season the whole bag at once, but I usually just work on the other half while the first is cooking. Makes it easier to find the stems and get the flavor just right for me.

I really have never had them longer than a day or two because I eat them all. Maybe someone else would know?

I tried making kale chips once and loved them. Then I put them into baggies for the future and when I tried eating them again a different day they had regained some moisture to them and were chewy. YUCK. Perhaps I should have done something differently? I'm pretty sure I waited for them to cool completely before I sealed them. Maybe I should've baked them longer? I thought I did ok though cause some of them were almost 'dust' when I took them out and they were all crunchy. I'd love to be able to get the hang of them because I really enjoyed them!

I should try this. I made them once, and all I can say is yuck. I think they would be good if made right!

I should try this. I made them once, and all I can say is yuck. I think they would be good if made right! I have had some yucky batches, but when they turn out just right, I can eat a whole bunch! My oven overbakes if I turn it above 350. I think the parchment paper really does the trick. Just really rub in the oil and seasonings also. Maybe storing them with a paper towel in the bag would help? I have never had to store them because they get gobbled up by me or someone in the house.

Try storing them in glass - like a half-gallon mason jar.
