Lunch today!!! Canadian bacon, green onions, green olives, green peppers, and mushrooms with a sprinkle of mozzarella! Edges got a little dark as I like to broil mine awhile because I like my cheese on the middle dark. Next time I won't bake as long. Yum yum!!!!! Attachments:

That looks really yummy! Have you tried the Fooled Ya crust? If you have, how does the speedy crust compare?

Mom2, I have used the 'Fooled Ya' crust quite a few times. That is actually my go-to crust, but our grocery store was out of cauliflower the last 2 times I was there! So I made 'Speedy' today. It is the 2nd time I have made it. "Fooled'' crust is kind of soft and has to be eaten with a fork. (Maybe I could do something differently? I don't think I should bake longer because the mozz cheese in the crust is dark.) The texture is a little spongy from the egg whites and cauliflower. The ''Speedy'' crust is thinner, and kind of crusts on the bottom, and if left to cool a bit can be eaten 'regularly' with you hand. I prefer to use a fork anyway though because the cheese is so greasy. Overall I like the texture of ''Speedy'' better (as does my husband. He is not 'on plan', but likes to sample!). But, I usually use the ''Fooled Ya'' crust, as I feel better about it being made up of mostly veggies instead of all that cheese. Then I don't feel so bad about 2 or 3 pieces!! haha.

Thanks coffeemama09! I like the Fooled ya pizza and hubby (Italian) likes it but says it doesn't taste like pizza, just a good Italian meal. I've been curious about the Speedy Crust b/c of the "speedy" part & b/c I had to go to 3 groceries stores before I could find frozen cauliflower today. Wondering if it's b/c cauliflower can be used in place of so many things to revamp unhealthy recipes & so many people making healthy eating NY resolutions?! I'll have to try it, yours looked really yummy!

Coffeemama, are you spreading your cauli crust out thin enough and squeezing out enough water? For a double recipe I fill 3 large baking trays with my Fooled Ya crust, never have to use a fork. But, your Speddy Crust Pizza does look super yummy.

Mom2, maybe there is a cauliflower shortage?? haha. (Sort of.) Pearl, I usually squeeze the cauli with my hands to get all the moisture out. I must have to spread it thinner. Guess I'll have to have pizza again soon! Poor me!

I ran out of cauliflower so the second time I made fooled ya crust I used spinach and zucchini doing the same method. It turned out super fabulous!

I like to wrap my cauliflower in paper towels and squeeze out the water. Cheesecloth would work great I bet. Zucchini too. Sometimes takes several paper towels to get most of the water out.

I blended the zucchini added it to thawed out frozen spinach and wrung it out in cheese cloth together.
