I posted that this was a success about 2 weeks ago or so? and someone asked for the recipe... well, this is kind of it. I tend to play around with things a lot, but this is mostly how it worked. This makes a 9x13 pan full, and feeds my large family.
Broccoli Bake
2 c 'cream of chicken' (recipe below) 2 sm cans chopped mushrooms 1 c (-ish) mayonnaise (I eyeballed it) 6 eggs, beaten 3 chicken breasts, chopped and cooked 1 onion, diced 3 c shredded cheese 1 package frozen broccoli, thawed
to make the cream of chicken, I took 2c hot water, 4 chicken bullion cubes, 3/4 tsp glucomannan, and 3 Tbs cream. Wisk in saucepan until thickened, let cool a bit.
In a large bowl, mix the cream of chicken, mayo, 6 eggs, and 2 c shredded cheese.
toss the chicken, broccoli, mushrooms, and diced onion together in a 9x13 pan. Pour cream of chicken mix over the veggies and chicken. Sprinkle with remaining cup of cheese.
Bake @ 350 for about 45-60 minutes, until set and golden.
Enjoy! It's a fairly flexible recipe that can be changed up pretty easy. No cubed chicken? go for leftover turkey, maybe another meat, or leave it out altogether. Change the broccoli to cauliflower, or a mix of veggies. Try cream of mushroom flavor, or a different cheese. Play around with it. it's been a nice casserole for our family, and we all love it. This was a hit with my whole family! Thank you! I didn't have bouillon cubes, but substituted 2 cups of chicken stock I had on hand, instead of the bouillon cubes and hot water. Also, since my glucomannan powder isn't working (second time I've tried, at least), I added a half teaspoon of xanthan gum, which did thicken it fine. Delicious!!! Did it with a side salad, and all were happy!

fruitfulvine, have you contacted Konjac foods about your thickening issues? I did, but have not heard any response yet. Maybe the holiday has them out of the office. I think it would be good if all of us speak up!
