My 6 yr old adores potato soup as much as my 8 yr old despises it. I'm a fan myself and was sad it wouldn't be on the menu anymore ... enter Fotato Soup!
I started with a half pan full of chicken broth to which I added a 16oz. bag of frozen cauliflower. Followed the book directions for cooking. Meanwhile, sauteed some onions in coconut oil. Blended the cooked cauli with the onions and returned to the broth. Added small pkg. of cream cheese, salt, Braggs, and 4 fresh garlic cloves. A few shakes of glucommanan and some heavy stirring. I thought it tasted yummy, but the real test ... the kids.
6 yr. old said, hmm, I've never tasted potato soup like this, but loved it and couldn't be persuaded it was made from cauliflower. I think she was mostly referring to the smoother texture as I usually mash the potatoes roughly. Had seconds ... Whew! Funny side note, the spoon I used to stir the soup had a crumb of Special Agent Brownie Cake on it and it got in the soup. My daughter saw it and said, yep, it's potato, there's a sking
8 yr. old happily ate it knowing that it was cauliflower.
3 and 4 yr olds. slurped it up
I served it with Golden Flat Bread with coarse sea salt and rosemary sprinkled on top and garlic butter brushed on right out of the oven.
We sprinkled cheese on the soup, as well. I wasn't sure if it would be enough but I couldn't believe how filling it was. I only managed one bowl and I was full alll evening!
It was a hit all around, only wish my husband wasn't travelling so he could have enjoyed such an awesome dinner!
