This is a recipe I always end up coming back to. It's easy, healthy, and oh so good! I thought I'd take a picture this time around to show all of you. Just 5 basic ingredients: Egg Spinach Onion Bacon (or turkey bacon) Sherry Vinegar - sub apple cider or a wine vinegar if you like. You want a good flavored vinegar though, not plain white vinegar. Fry up some bacon in a skillet, then remove from the pan and throw in some sliced onion (along with some extra butter or coconut oil if you used turkey bacon), and sprinkle with salt and pepper. While it sautes, get some water boiling to poach an egg. When it gets to a low boil (keep it gentle, no hard boiling), splash in some vinegar (maybe 1 Tbsp) and crack an egg directly into the water. Set the timer for 1 minute. The vinegar helps the egg stay together. You can use white vinegar for this if you want. Now check your onions, and when they're soft, add in a bunch of chopped spinach. Use an enormous handful, because it cooks down to almost nothing. Let that wilt while you scoop the egg out of the water and place gently on a paper towel. Sprinkle lightly with salt and pepper. Now, for the final, special touch, splash a bit of the sherry vinegar on your spinach mixture, right in the pan. You don't need too much, but a splash of it really takes this dish to a whole new level. Chop up your bacon, throw it in with the spinach and toss around, and then scoop it onto your plate. It should smell amazing in your kitchen by now. =) Top the spinach with your poached egg, and enjoy your breakfast. I love to have mine with a nice Americano with cream.
