Are you ready for a succulent dessert that will help wipe excess pounds off your body while you eat?
The TRIM HEALTHY MAMA approach is about satisfying your cravings while finding your healthiest weight. Incredibly, our indulgent desserts don’t cause weight gain. You can finish one of our trimming, protein packed meals, have a sweet and creamy treat afterwards, and not undo any of the benefits from the meal. While that’s good news, it gets even better.
A select few of our desserts are in such an elite group of excess pound fighters, you might want to think of them as “Special Forces.” They’re like Navy Seals when it comes to skill and ability to help you fight stubborn body fat. They literally kick unwanted pounds away. We call these our Fuel Pull deserts.
Enter LEMON COCONUT MOUSSE. I am seriously addicted to this dessert. Thankfully, that’s a good thing since it’s in this special category. If you haven’t tried it yet, grab your blender and speedily reward yourself with this blissful dessert which is both healthful and slimming.
Considering the amount of this I have eaten in the last year, you’d think I would be sick of it. Not so, it’s too good! Coconut and lemon--I know, those ingredients usually depict a lovely desert for spring or summer, but here I am in the fall savoring every mouth full. I doubt I’ll kick the habit when winter arrives.
You’ll enjoy the sweet tangy flavor and smooth mouth feel of this mousse and just might become as addicted as I am. Good for you.
Here’s what this dessert can do for your body. The full lemon it contains boasts bioflavonoids that powerfully benefit all your blood vessels and reduce free radical damage. Lemon is a super cleanser and alkalizer for the body.
Speaking of alkalizing–enter our favorite ingredient– glucomannan powder. This is the substance that turns liquid into creamy mousse or pudding. It has the second highest alkalizing ability of all foods on this planet, second only to wakame seaweed! But, best of all, glucomannan creates a full feeling, suppresses appetite and actually lowers the glycemic index of other foods when contained in a meal. That means it helps you drop pounds if that is what is needed. It is a pre-biotic and encourages the growth of good bacteria in your gut like bifidobacterium.
Let’s not forget coconut, another star ingredient. It enables your thyroid to work better which then revs up your metabolism. Coconut raises the thermal temperature of your body which causes you to burn more fat! More reason to eat this dessert even in winter, coconut warms you up degree by degree. It is also anti- microbial, anti-fungal and also greatly benefits your gut health. So what have we got? An indulgent dessert below 60 calories per generous serving and a health booster like no other.
I’ve been adding one scant teaspoon of virgin coconut oil to the recipe lately. It brings a fuller fat flavor and mouth feel in my opinion. With only one teaspoon, it still allows this recipe to stay in our Fuel Pull arsenal as an extreme heavy hitter when it comes to getting rid of extra weight. You can eat this dessert with either of our S or E meals. I like to eat it before bed if I’m hungry, but don’t need food. It affords heaps of nutrition with only scant calories. Eat it any time, as a snack, after a meal, even as a part of your breakfast. Just eat it!
If you are dairy intolerant, this is a great dessert for you. We have another version in the book where Greek yogurt is used in place of the coconut milk so if you are a dairy lover like I am, you can switch up your core ingredients. You can even substitute berries for the lemon, if you tire of the lemon flavor which as I mentioned, I never do. We also have an upcoming version that wasn’t ready quite for book printing where we add whey for a protein boost. But, that’s another blog.
The basic recipe is on page 367 in our book, but here’s the way I’ve been making my mousse lately:
Basic Ingredients: whole lemon * water * sea salt * light canned coconut milk * extra virgin coconut oil * glucomannan powder *plan approved sweetener
1. Peel the yellow off one lemon, keeping as much of the white as you can so it retains all the healthy flavanoids. Roughly chop the lemon, get rid of seeds and put in blender.
2. Add ¼ cup of light canned coconut milk.
3. Add 2 cups of water.
4. Add a generous pinch of sea salt (Serene told me Celtic Sea Salt makes all her desserts taste better, I broke down and bought some and what do you know, she’s right).
5. Add 1 tsp. extra virgin coconut oil.
6. Add 4 rounded tsp. Truvia or a few shakes of the NuStevia Pure White Stevia Extract Powder.
6. Start blending and slowly add 2 tsp. glucomannan powder. Blend for a couple of minutes. Stop blender. Let it rest for a minute or two then blend again until thickened to a pudding/mousse consistency… enjoy.
