I love these pancakes; they're so filling and taste wonderful. However...I had a very hard time cooking them as they stuck so badly to my skillet. I did try using the tiniest bit of coconut oil but it really didn't help much. We don't use non-stick cookware because of the health issues with them. So I have two questions: 1. Is there a new type of non-stick cookware that I don't know about that's safe? 2. Is there any way to keep the pancakes from sticking without using way too much oil?

I love my OrGreenic pan - it's non-stick, but I think it's ceramic and is supposed to not have the health issues that teflon, etc. have.
I used cooking spray on my griddle to help them not stick (my Green pan is too small to do a batch quickly).

I've had the same problem. I also avoid non-stick pans, so have been trying to make them in my cast iron pan.

I have stainless and I just put a tiny bit of butter in a hot pan and they haven't stuck, but I am hoping to get one of the ceramic coated for eggs and pancakes. Cast iron will season up after a while so it is non-stick almost

I think I've figured it out. I use cast iron and some days (especially when I was using batter from the icebox) my pancake was sticking like crazy. Today, straight out of the fridge, I made sure to get the griddle really hot before pouring on the batter and then waiting, waiting, waiting, until the whole pancake was covered with bubbles before turning. I tried to turn to soon and I could tell it wasn't budging. Same thing after flipping ... wait, wait, wait! Sometimes it helps to loosen the edges first, but if you really wait, then it comes off straightaway, no problem  I have a really hard time waiting, so I found it helped if I walked away (started laundry, set the table, etc.).

Thanks, everyone! I have a couple of cast irons skillets that are nice and seasoned but hadn't tried them yet, but I'll see how they work.

I have a ceramic pan that is non-stick (no Teflon) and it works fab for these pancakes.

A non stick griddle makes the pancake cooking so quick and easy. I spray a little olive oil and it's effortless. I think the key with non stick is to not get it too hot or scratch it up, much less chance of harm that way. I used to swipe with the tiniest bit of butter but spraying fits more with my short cut approach, makes things easier and I LOVE easy.

I just bought the green ceramic no stick pan at walmart. Wow! I love my castiron pans, but this was fab and so fast. It is so slick I accidently flipped out one of my fried eggs on the floor! Wow, did that make a splattered mess as the yolk wasnt set. I told the kids not to use metal on the pan. We made fried eggs and scrambled with a rubber scraper and it worked perfectly. Yay! I'll have to give it a try next time I make the pancakes, although with 6 kids, I would be there all day doing one at a time. I use my cast iron griddle on my Jenn-Air griddle spot. It has worked great so far. I can use more oil on the kids, so maybe I will make mine on the ceramic pan.

I used non-stick spray on a cast iron skillet. I first used coconut oil then butter and the pancakes stuck to the pan. I switched over to Pam and they didn't stick.
