I had the bright idea of quadrupling the TH Pancake recipe. I only had 2c of low-fat cottage cheese so I used 2c of ricotta to make up the difference. Only after they were cooking did I realize the ricotta was whole fat :/. How does this alter the E label on these?

Yes, probably close to a Crossover but not a big heavy one. Do not stress it, you'll be fine, we all do these things. You don't have to be perfect about the plan, it forgives you.

Thanks Pearl, I've been struggling with this. My perfectionist side said to leave them for the kids but my taste buds won out. They are so good topped w/ Greek yogurt & warm blueberry sauce!
