I have mostly S breakfasts, then also S dinners and S desserts... and mostly S snacks! So I thought it was time to get an E breakfast into my life. The problem is that I love chocolate cakes and muffins for breakfast--LOL and if there is one sitting around, it is hard for me to go to an E breakfast instead! So here is my Fuel Pull version of cake in a mug, but I make it in a bowl. 1/4 cup egg whites 2 heaping Tablespoons cocoa powder 2-3 Tablespoons xylitol (or truvia/stevia to taste) 1/2 tsp. baking powder 1/2 tsp. vanilla 1/4 cup vanilla glucomannan pudding 1 tsp. store bought coconut flour (or add more cocoa powder to thicken a bit) mix all together with a fork and microwave for about 3 minutes (but my microwave is not very powerful, so experiement) The cake is very moist and spongy. I ate it with extra (warmed) gluc pudding on top (killer with raspberries too) and also had some Trim Healthy (pumpkin) pancakes for breakfast with "done up" greek yogurt. I couldn't eat the whole cake though. So full.
