Just curious about the grain recipes in the Nourishing Traditions books, esp waffles/pancakes, or the compromise bread, all which are soaked wholegrain flour before making? Guessing the combination of grains with fats (butter, buttermilk, etc) means it doesn't fit in with any of the THM ways of eating. But thought I'd ask anyway! I know my family enjoy the NT soaked waffles every Saturday morning for breakfast, but I don't eat them anymore. But hope to try the THM pancakes soon for myself.

Try soaking in kefir or nonfat yogurt instead of buttermilk. If you can adjust the butter/coconut oil in the recipe so that it dips below 2 t per serving, you should be ok on that front, too.

I made the THM pancakes for my husband and I just this morning and I made sourdough waffles & panckaes for the kids. I set them both up last night. Wasnt a lot of trouble to do both. They love the THM pancakes, too, but my sourdough was getting full so I had to make something with it. Plus, I didnt feel like seperating all those eggs to 4 times the recipe so they could all eat the THM pancakes.
