I have a recipe that our family LOVED back during our Whole Grain Jane days. Was wondering if there was something I could do to make it a S approved dessert? 1 cup sugar free peanut butter 2 cups quick oats 2/3 cup honey 1/2 cup slightly warmed coconut oil 1/2 cup flax seed, finely ground 1 pinch sea salt 1/2 cup semi sweet chocolate chips. Mix top 6 ingredients together and press into 9x13 pan lined with parchment paper. Melt chocolate chips and spread thinly over bars. Refrigerate and slice. I thought it was oh so healthy back then!! Yikes!  Was wondering if some combo of sugar free peanut butter, ground flax seed, stevia and coconut oil would work for the base. And skinny chocolate for the top? Served in small pieces from the freezer? Any ideas? My 12 yr old is has been asking for them and I sure would love to oblige in some acceptable form! Thanks! brandy

Those sound great! I wonder if you could use almond meal in place of the oats to form the base. I would think that you'd still need something to stick it all together, and the stevia won't do that like the honey does. Maybe use an egg and make sort of a muffin-in-a-mug type batter for the base (you might have to bake it a little) and then spread skinny chocolate on it.
Have you looked at the bar recipes in the book?

What is the role of the oats? Just to bulk it up or to make it more crust like?? Could you sub unsweetened shredded coconut for the oats? The honey would make it stick together but so does the peanut butter.... I think the best bet would be to make the pb cookies from the book, adding the flax instead of the cocoa powder, stevia instead of honey and just take out the oats entirely. Maybe add some extra flax OR pb flour for the oats, like a handful. Bake, cool and top with freshly mixed skinny chocolate and freeze. Or bake, cut, cook and dip in choc. It might not be the same but it might be close. Make a small batch to test it out
