wondering when if ever, spelt flour would fall under an E meal? Financially it is hard for me to buy Almond flour etc. And we get 50lbs of spelt flour for $38.00 so it's a lil hard to not use it for breads, baked things, and pancakes etc. would soaking it make a difference or is it just a no no?

I'm wondering that too... I only use spelt (as apposed to wheat) and have for years but I haven't been consuming it myself lately because I have lots to lose.

Serene's sourdough recipe in the book uses half spelt and half rye (which is even cheaper than spelt!) I made for the first time this morning and its very good!!
