I made this mix because I was tired of getting out all the ingredients to make a muffin. Plus, the kids all loved them so it was mess times 6! I usually double or triple this and put it in a big wide mouth glass jar with a protein powder scoop in it. I think the recipe below is 8 times the recipe in the book.
1 cup golden flax meal 1 cup almond flour 1 cup cocoa powder 2 tablespoons baking powder 3/4 teaspoon stevia
Mix together. To make: add 1 T oil, 1 egg, 1/3 cup master mix and mix. Nuke 1 minute
To make my Poppyseed Muffin in a Mug master mix:
1 cup golden flax meal 1 cup almond meal 1/2 cup coconut flour 3 T poppyseeds 2 T baking powder 3/4 t Nustevia
Mix together. We like to add a dash of lemon, vanilla or almond extract. To make: add 1 T oil, 1 egg, 1/3 cup master mix and mix. Nuke 1 minute
Be creative. What other combinations have worked great for you? My guys love to put a big scoop of peanut butter in with the chocolate muffin.

I was wondering if anyone has mixed one up ahead of time ? I am hoping this might work for my hubby to be able to make out of town since he usually has a microwave. But he'd have to be able to just pour it in, nuke it,and go. He is a runner and has a very physical job , so he is not trying to lose any weight,But since he travels a lot I am always looking for ways to get good nutrition in him!

You can make up a jar of it that he can take with him. He can take a container of coconut oil and some eggs (he could probably do a container of egg beaters or whites for ease of travel). Then all he will have to do is scoop out some oil, crack an egg and add a scoop of muffin mix. Stir and nuke and he's ready to go. My older kids do this and head out the door with their mug'o muffin.

I did the same thing and have a jar of the dry mix in my freezer. It makes this quick snack even quicker.

We got some strawberries today and I was really craving something sweet. So, I made the muffin in a mug, only I used 2 T almond flour, 1 T flax seed meal, 1 t coconut flour, 1/2 t b. powder, 2-3 t Truvia or a couple shakes Nustevia, 1 egg, 1 T oil and a dash of carmel flavor (I am more of a purist, so have never purchased this before, but I wanted something yummy and I just dont look at the ingredients. I will probably use vanilla ext next time so I dont feel so bad!). I mixed it and nuked it and put some strawberries and whipping cream sweetened with stevia on top. YUM. YUM. My husband had one, too. We missed out on our sons birthday treats, so we consoled ourselves with this.

Such mix works as a complete supplement for the body as if we take this mix in the early morning then we can feel energetic throughout the day.

Thanks so much for posting this. We are leaving soon for 2 weeks of schooling and are staying in our camper. The days will be jam packed so morning meals and evening meals must be simple. I have a crock pot in the camper and am planning on using it a lot. This muffin mix will be perfect to have on hand. Thanks for doing all of the figuring for us. :-)
