So today, I decided to try the Pumpkin Treat (page 388). Only, I made me own crust out of almond flour. Someone needs to tell me if the crust makes it too high in calories or not, but oh goodness, it is good!
I blended 1 1/2 -2 cups almond meal, 2 T. sweetener, and about 1/2 t. salt, and cut in 3 T. melted butter until it resembled coarse crumbs. Then I pressed it in the sides and bottom of a pie plate, and baked it for 8-10 minutes before adding the pumpkin mixture. So easy and so good. I love it!!!

hmm. I made a crustless version of this because I don't have almond flour. It turned out bad. What was your texture like?

With the crust, my texture was great! It turned out very much like other pumpkin pies I have had.
