My oat fiber finally came in and I was so excited to try the muffin in a bowl recipe.
I followed the recipe exactly as written and cooked the muffin for 1 minute. Our microwave cooks hot....yet when I took it out it was still very liquidy underneath and in the center.
So I put it back in for another 30 seconds. This time everything cooked.
But the consistency is not what I was expecting. It had a condensed spongy thing going on and was very flat. Is that normal?
Does anyone have a picture of what it should look like?
Maybe I'll try it again and not put a full 1/3 cup of egg whites and cut back the water.

It should not be flat. It rises very well. Spongy? Hmm... the texture is different but not really spongy. My daughter Meadow makes this one a lot and sometimes adds 1 tsp of coconut oil, she thinks it makes it more moist but...you are saying too watery. Ours have never been watery or flat. So sad and sorry it did not work out for you. I'll try to load up a pic next time we make it.

Check out a recipe in the FP board for one that is not made with oat fiber. You could give that a try.

I made it again tonight and it turned out much better. But I need to cook it for about 1:20. The consistency came out much better and it was only a little oozy in the middle when done cooking. Now I wonder if I forgot to add something in the first one.
