Found someone local selling them for $1.25/dozen! So, I have a few questions:
1. How do I know if they are omega 3 rich?
2. Can I use the yolks raw? (Is it the whites you shouldn't eat raw? Because of bacteria...?)
3. Some if them have chicken poop on them. Should I wash them (how?) or just wash my hands after handling them?
4. How do you tell when the eggs are no longer good? About how long do farm eggs stay fresh?
Thanks!

Usually, if they free-range they will be high in Omega 3, but just your average farm chickens should have more Omega than the conventional store type eggs anyway, unless. If they are fresh you should be able to use them raw w/ no problem. I would never use a store bought egg raw but I use the eggs from our chickens raw all the time, all of it. The chicken poop means they haven't been washed. Eggs have a protective film over them that is washed away when we wash them. Until it is washed you can safely leave them on your counter for a few days...I wouldn't leave them for more than a week. You can wash them & stick them in the fridge if you would like & then you don't have to wash them every time you want to use an egg. Before refrigeration you can teste them in a cup of water, if it lays on it's side it is fresh (I would use these raw), if it stands on end it is ify (I cook w/ these), if it floats I toss it. They should stay good 45+ days but they never last that long in our house so that is what I've been told, not experienced.

How do you wash your eggs? Seems like it would be a delicate matter.

My 5 year old son is responsible for washing our 3-4 dz a day eggs in our house (and sometimes his 2 year old brother helps) and we rarely end up with a broken one so I don't think they are all that delicate. He just adds water to a bucket and with a cloth in hand tackles them. The odd one that gets broken goes to the dog so it's all good.

I'm so proud of how hard and diligent they work. And my 5 year old begged from this chore from his older sister
