I like to peel them and cover with water in a small saucepan. When tender I slice and sprinkle with sea salt. I never really thought I would like them but I love them this way.

I love, love, love beets, both red and golden. We buy them locally and eat them frequently at our house.
Have you ever made beef borscht? If not, I highly recommend it. For weight loss you'd want to leave out the potatoes, and add extra cabbage in its place. I also roast beets in the oven. They turn out especially delicious when carmelized. Simply peel them and cube, then toss with herbs, sea salt, chopped onion and olive oil and spread out on a cooking tray lined with foil. (For E meals you could use a light Italian dressing instead of the olive oil and herbs.) Roast at 425° for 20-25 minutes, or until browned around the edges.
