Guilt Gone Cranberry Pie!
Okay, so I’ve been feeling a bit of guilt over the fact that I nixed the Cranberry Pie Sip many of you had been waiting for. I’m so glad you’ve been enjoying the Cranberry Wassail I offered in its place but I did promise pie! I tell you what, to make it up to you I’m going to give you real cranberry pie – not a drink - a real "blast your taste buds off into yummy oblivion" on plan, CRANBERRY PIE. Let's omit the "sip" part this time and sink our teeth into a hearty slice of the stuff. This is a nice S dessert, snack… or breakfast.
Cranberry Pie has been the chief reason my Huzby cheats every Thanksgiving. I am so cool with him going off plan on this wonderful day of feasting and celebration. I know he'll get back on plan in a couple of days because he never feels deprived on THM. But if I could find out a way to turn his favorite holiday cheat dessert into a healthy on plan delight then that would be all the better.
I really wanted to knock his socks off and get very close to the traditional pie he is so loyal too. I created this on Thanksgiving Eve and hoped for the best. I even said a little prayer over the mixing bowl as I tossed in carefully thought out measurements. It was a hallelujah moment when I scanned his face while he skeptically took his first bite and a huge smile lighted on his cranberry crumb lips. He told me it beats the old one hands down!
“It tastes like moist,-buttery-sweet-short bread bursting with tart caramelized cranberries Right?” I asked.
He agreed! Actually he announced it his favorite holiday dessert and asked me to make it for Christmas dinner. But he wanted more even sooner than that. For the last four days my family has been frequently indulging in this Guilt Gone Cranberry Pie. We have not only had it for desert but every day for breakfast since Thanksgiving!
But every time I’ve savored a delicious morsel I’ve thought of you… I kept feeling like I owe you this recipe big time. You need to be reveling in the pleasure too.
Without further ado... here's a pie to get rid of guilt... mine for not sharing it with you for thanksgiving and maybe some of yours when you have a yummy holiday pie to beat the "cheat" cravings. This is an easy recipe and I hope it brings your family as much joy as it has mine.
Guilt Gone Cranberry Pie
Ingredients
1/2 cup Oat Fiber (this is not oat flour or oat bran but something different without carbs or calories, thankfully it is inexpensive) * 3 eggs * 2 cups fresh or frozen cranberries * 1/4 tsp. Guar gum or Xanthum (simply leave out if you have an issue with gums) * ½ cup of Stevia Blend (check below for details) * pinch of Sea Salt * ½ cup chopped walnuts * 1/2 cup or 1 stick of pastured butter (regular is fine for our Drive Thru Sue's) * ½ tsp. Almond extract * 1 tsp. Pure Vanilla extract
DIRECTIONS
*Cut stick of butter into small chunks and put into a mixing bowl with all other ingredients except cranberries.
*Use your hands to combine all the ingredients well… yes even the eggs. Really get in there with both hands, get messy and scrunch and mush ingredients together. This is a quick way to get the job done but if this idea grosses you out, simply use a Bosch or other mixing machine.
*Add cranberries and mix again.
*Put pie mixture into a well-greased pie dish and bake in a pre-heated oven on 350 for 40 minutes. (Place pie on middle to high rack so the bottom does not burn).
This tastes best served hot. If I end up refrigerating any once cooled then I re-heat individual slices when desired. I love it served with vanilla TUMMY TUCKING ICE CREAM (page 369 THM) or with whipped cream (raw and pastured for us Purists or just the regular store bought for Pearl and her short cut friends… ha ha).

Note – For the Stevia blend in the ingredients - depending on your level of purism this can be a store bought blend like Truvia or its generic equivalent or use a homemade version. If using a store bought stevia blend avoid any mixed with sugar, maltodextrin or dextrose. I made a home- made blend which is simply 1 tsp. Stevia extract mixed with 2 cups Erythritol (only use ½ cup of this blend for the recipe). I had to give up my "pure stevia extract only" policy for this pie as it needs the bulk and caramelizing action of erythritol.
