Lately I was craving something in form of muffin or banana bread or some kind of baked desert. Walking past bakery section in a store I looked at muffins and really wanted one. So I decided to search for low-carb muffin recipe on internet. And found a good recipe which I decided to turn into a THM muffin. It turned out just simply amazing and satisfied my cravings. So here it is: Muffin 2 cups almond flour/almond meal 2 teaspoons baking powder 1/4 teaspoon salt 1/2 cup melted coconut oil 4 eggs 1/3 cup water 1/2 teaspoon Nunaturals and 3 teaspoons of Truvia (I didn't want to use 1/3 cup of Truvia so I decided to mix it up with NuNatirals. Also I added additional 3 teaspoons of Truvia because I wanted to be sweet. It didn't turn out supper sweet, but it wasn't savory either. you can adjust sweetener according to your desires) Preparation: 1) Preheat oven to 350 F. 2) Grease with coconut oil a muffin tin. You can really do it with any size. 3) Mix dry ingredients together well. 4) Add wet ingredients and mix thoroughly (You don't want strings of egg white in there and you don't have to worry about "tunnels" when you are using almond meal). 5) Put in muffin tins (about 1/2 to 2/3 full) and bake for about 15 minutes to 20 min. (In my oven I tried 15 min and 20 min, and 20 min worked best for me) Enjoy!!!! Attachments:

These do look really good. I find when I try new desserts or breads it helps when they look like 'normal' foods. They seem to taste more like we r used to and the texture doesn't seem as strange. Interesting how our eyes play into how we react to foods!

Yum!! Thanks for the recipe! Do they have a coconut-y flavor because of the coconut oil? I love all the coconut muffins I have made from the book but I find that they all kind of taste the same ... like coconut! lol I'm sure these won't taste as much like it because there isn't actual coconut flour in it but just thought I'd ask

But we all have different taste, but if you are tired of coconut oil taste in muffins you can do it with butter. Original recipe had butter instead of coconut oil.

Thanks for the recipe! I made these with butter simply because it is cheaper and they were very nice. Whole family enjoyed them. (I also added a bit of cinnamon. ) Thanks again. I really appreciate all the support from these forums.

I guess I missed the original post....so glad to see it now.
I have plenty of almond meal from making my own almond meal and this would be a great use for it, mixed with some almond flour.

I made these yesterday....I added 2 TBSP of cocoa powder...they were so good
