I've posted several dessert recipes, and I have another one to share with you. I do promise though that I eat regular food too! This is just a reminder of how amazing your food can be. I took my bowl of Tummy Tucking Ice Cream today and melted a super healthy, EV coconut oil piece of Skinny Chocolate and poured it on top. It hardens into a perfect shell and gives that lovely chocolate crunch that I love in ice cream. And I'm also getting some superfood in my body and speeding up my metabolism. Today I also added some butter flavoring to my ice cream. That's my not-so-purist side coming out. I'm a stickler when it comes to staying on plan, but I have my little "cheats." I felt like a little coconut butterscotch flavor today. Enjoy your food, ladies! It can be so good.

That sounds so delicious Emily!!! I don't have a food processor, so I haven't made the ice cream yet. Do you think a blender would work?

It might work with a high end blender like a Vitamix. I'm not sure. You would have to use a lot less cubes at a time I would think. I have made a more soft-serve ice cream using the cubes before in the blender. Just use more liquid and add it in with the cubes at the beginning.

I can't wait for my glucomannan to come in so I can give the ice cream a try! That looks delicious.

general ice cream question here... I know you put the liquid into ice cube trays. Once you're ready to make the ice cream, does the recipe in the book use all the ice cubes?

Yes, the recipe should make 24 cubes, and one batch uses all of them, along with the given amount of added liquid. Of course, you can use less if you want to and use less extra liquid. I do that sometimes. I like to make up several batches of cubes at once and store them in a freezer bag. That way I can just pull out however many cubes I want to make ice cream when I get the hankering.

I tried it in an ice cream maker and it did'n't work very well. Perhaps there is a way to make it work but it might take some experimenting.
