Lemon cheese mousse: Or should this be called a salad? Not sure. Serves 4-8 In pan mix and bring to a boil: 3 cups of water 1 cup fresh squeezed lemon juice 4 Tbs. beef gelatin 1 tsp. lemon extract Stevia extract (I used 1 tsp of Now brand) Stir and boil, (don't let gelatin glob up). Remove from heat. Pour into bowl and chill till cool and somewhat set. Stir lightly to chunk up. In blender: 1 cup cream Stevia (I used 1/2 tsp Now extract) Blend to whip cream. Fold together 2 above preparations with: 3 cups, (was 1 container) cottage cheese. Cover w/ saran wrap and chill. May also put into individual jars. You could also just blend the hot liquid lemon gelatin with the cottage cheese, stevia, and cream, for a smooth effect. But I liked the whole cottage cheese curds and flicks of set lemon gelatin.

No dairy on the 1st 3 days of Deep S, I'm on day 1 of FP so I can have GY & cottage cheese . But no full fat dairy so this yummy recipe will have to wait.

I'm thinking this could be made a fuel pull by using low fat cottage cheese and substituting Greek yogurt for cream.... I just like cream! (Since I'm not on a fuel cycle )

This is so yummy I used 1/4 fresh lemon juice and the rest bottled, simply because I was tired of squeezing the lemons and used only 1/2 tsp of the old NuNaturals~ I tend to like things a bit less sweet and have heard it was probably more "powerful" than the Now I did the smooth blended version, it hit the spot.

I made this a FP today. I used 2 cups of Greek yogurt, and 2 cups of fat free cottage cheese. It was good, but my daughter definitely prefers it full fat!!

I'm going to try it FP today too! It just sounds so good & I'm on a FP day & trying to figure out what to have with my lunch. This sounds great & my little ones will love it as a treat! Cheers to happy FP treats

Ok Rebekah, I finally got to making this.... Delicious!! The sweetness was perfect, the lemon zing was there, and easy to put together. My husband doesn't like lemon so that means more for me. My 12 yr old daughter loved it too. I'm not going to share this batch with my littles this time. Between my daughter and me, we should get a few serving out of it.
Thank you for putting this together and posting it, especially the measurement of stevia. Lemon was the flavour I've been craving for a while and this hit the spot.
