Just had a yummy E breakfast- peaches and 'cream' oatmeal.
I soaked oatmeal over night. I chopped up 5 slices of frozen peaches and added it to the oatmeal. Added a bit of sweet blend, then about 3/4 tsp of vanilla whey protein powder. Cooked it til the water was absorbed. The protein powder really gave it a creamy taste!

I just soak in water. I believe you can add a little ACV.

Please remind me, is there a benefit to soaking the oats, or is it just as good to cook them from dry just before eating?

Yes, it's mentioned in the book. Helps break up phytates.
