Greetings!
Does anyone have a suggestion (or two or three!) regarding keeping the Best Macaroons in one piece? I couldn't make them stay together when plopping them onto a cookie sheet to save my life; they crumbled into a pile of dusty, chocolate-y coconut goodness, but I wanted cookies!
I combined Hershey's cocoa, Bob's Red Mill coconut-small and large flake, egg whites, Celtic salt, Sweet Leaf stevia, & Kirkland vanilla. (Not in that order; I used the book and followed the directions.) I used my Kitchenaid to whip eggs and mix wet ingredients, finally folding in the remaining ingredients with a spatula. I also doubled the recipe - is that where I went wrong? Got any ideas? They fit nicely into a jelly roll pan - all pressed down, but my hubby really wanted cookies, not bars!

I've never made them, so I'm not sure. All I can think of is more liquid. Egg whites or some coconut oil.

I have had to add more egg whites, I haven't measured, but just added until they stuck a bit more in lumps.

Thanks, ladies! The next time I make these little gems I will add more oil and egg whites. My 16 yo DD decided to get creative with these crumbles yesterday. She scraped the mess off the pan and added in THM icing to form "cake balls", finishing them by rolling them in more coconut. Yummy! If all else fails, add a THM approved frosting! Blessings, Stacy
