My husband is Colombian and he loves plantains where do they fall in the plan?

Well they're definitely E. I not sure how you cook them but you'd want to use at most a tsp of oil (no deep frying). And even one whole plantain would be all the carbs you want in an E meal. My suggestion would be sauté it with just a little oil, salt it (no sugary topping) and split one between the two of you.

Nebby is right that they are definitely an E! And they are high in carbs, so you do want to be careful with them. Maybe use them just occasionally, and see if they interfere w/ your husband's weight loss.
