I made the Cake in a Mug last night, and it was nasty. For one thing, it came up over the mug on two sides, which was unappealing and made a bit of a mess--I pushed it back down and could eat it. But even worse than that, the texture was like eating a wet sponge. There was even moisture on the bottom. I can't believe this is something that anyone finds satisfying or that this recipe was tested.
I followed the recipe exactly. Am I missing something? Thanks.

Hmmm I don't do cake in a mug but it seems like there should be something flour-y in there. Maybe add 1 tbsp coconut flour? I always microwave my in a mug recipes for 2 minutes and usually do them in a bowl or Pyrex not a mug.

Kimkg, I'm so sorry you didn't like the CIM. Nebby's suggestion of using a bowl is a good idea. Also, I would think if it is too wet, to cook it longer. I hear all microwaves don't cook at the same rate. Many women LOVE this recipe, but not everyone loves every recipe.

I dump it out of the mug ( once it is baked) & slice it horizontally in 3 or 4 slices & place in toaster oven or in a heated pan & toast it to desired crispiness. BUT, even better I discovered that if I pour the mixed batter onto my preheated waffle iron & cook it a minute or so that it is amazingly delicious!

I have spread it on a plate & baked it in the microwave & it turned out very well. I did have to bake it abt 75-90 seconds instead of just 60. Again, I toast mine. I have always toasted even regular bread as I don't like any bread soggy.
