I haven't been able to find info on water kefir. There is plenty of reference to milk kefir in the book, but I'm wondering about water kefir. Is this something that we can drink? How does it fit in the plan? You do feed the grains with sugar, but it's my understanding that the grains use that for food--think sourdough. I'm very new to water kefir, but I know it has health benefits...just hoping it fits into THM somehow! Thanks! ~ GrammaH

Water kefir can be on plan. A small glass can be used as a fuel pull, but I would keep any more than that in an E setting. You do want to be careful that there are no extra sugars, fruit juices or other off plan ingredients added after fermenting.

I have a question related to your answer. When I make water kefir the first fermentation is the grains with 1 qt water and 1/4 c sugar. I then drain the water into another container and add about 3/4 c fruit juice. This then sits on the counter for 2-4 days til it gets fizzy. Would your answer of a small glass for fuel pull and any more than that for E days still apply in this case? Thanks for checking.

Grammalynda, I know the fruit juice unfermented would definitely be off plan. But, if it's well fermented, and you really want to try it that way, I would just use it carefully in an E setting and watch and see if it makes any difference so that you don't stall.

I think I'm just going to hold off for a little while. I've lost my first two pounds and have about 18 more to go and don't really want to take the chance of stalling. Maybe when I get to goal weight I'll try it then. Thanks for checking for me tho.
