Good morning Mamas! I am working on how real tapioca could potentially be on plan. My hubby loves tapioca pudding and so do I! For now, I have been using the grains, almond milk, vanilla, egg whites, and super sweet, but I don't know if that really qualifies. Typically, I only have a bite or two, since I don't know how much I can actually consume, so I am trying to be good. I would label it an E. What do you think?

What grains? Is tapioca a grain? Sorry, only had it a few times myself.

I don't think there is any way you can make actual tapioca that would make it on plan. Its too high glycemic.
Have you tried chia pudding? It can be pretty close. It even looks like tapioca if you use the white seeds.
Also, you could make a version with the not-naughty rice (konjac noodles).

Thank you, ladies, for your responses! Yes, I did mean tapioca granules or grains. I enjoy the chia version, but hubby finds it too slime-y. However, I haven't tried the NNR version. Maybe that would work? Well, at least for me! It's tradition to have tapioca pudding for Christmas Eve dessert in my husband's family, so I may go back to the original version for everyone, and I will make THM version for me.
