How about using homemade almond milk? Can I use that? Do you have a recipe that will work for the recipes in THM? Thanks so much, Christina

You can use homemade almond milk in S recipes. It is more calorie dense. The store-bought almond milk is lower in calories, fat, and carbs, so it works for E or fuel pull as well as S. You can use any recipe if you want to make almond milk for S, as long as you don't use non plan approved sweeteners or fillers.

So if you make your own you can dilute further with water for FP or E purposes.

What I was wondering is if I can use my own almond milk for E and FP recipes, like pudding. When I make my own it is quite diluted compared to the average recipe. The average recipe uses about 1 cup almonds to 3-4 cups water (1 quart). I use 1 cup almonds to make 2 quarts of almond milk. Would this work for E and FP? Thanks again for just a bit more clarification!
Also, just a note. I have searched the web for almond milk recipes and realized that you can make almond flour out of the pulp that is left after making almond milk. All you have to do it spread it out on a pan and either dry it out in a low oven (about 200) or put it in the dehydrator. Two products for the price of one!!

What great information! What appliance do you use for making the almond milk?

I think the version you make would work well. I wonder what the carb and calorie content is for one cup. It sounds E and FP friendly though.

Oh... Well I've certainly been doing it wrong then... Is the store bought stuff really just more diluted then? I guess I'll cut mine with water....

Yes, the store bought is more diluted but then thickened again with various gums. You could thicken yours slightly with gluccie. See how that turns out.

How long do you find your homemade almond milk lasts? I prefer making it so it doesn't have the additives of the storebought but I find it gets nasty after a couple of days. it seems like it should last longer. I also wonder if the gluc would work as a bit of emulsifier too so it doesn't separate?

I make my almond milk with a Vita-Mix. I was also thinking I would try to use just a little gluc to see if I can thicken it just a bit. Mine seems to last nealy a week in the fridge. I make a gallon at a time, half unsweetened for me and the other half sweetened for the kids (using a few dates or a little raw honey). Also, it costs less than buying a gallon of regular milk! I would love to have raw dairy but there are very few dairies in WV, where I live. But my sister's husband is a dairy farmer in NY....what a blessing!

My almond milk lasts about a week. I'm going to try making it weaker and thickening it with glucomannan. Not sure the kids will go for it though, so maybe I'll just do two batches

When I make almond milk, I blend 1 c soaked almonds to 4 c water and don't strain. Sounds like this would be fine for an S but not an E. But what if I strain afterwards? Would that make a difference? Or would it definitely need to be diluted further to qualify for an E?

Once that is mixed in with a FP smoothie and whey is added, it will taste creamy.

Has anyone gotten the amount of xanthan and/or gluccie figured out for almond milk? Thanks!

I just tried a new amount yesterday....in the kids date-sweetened almond milk (I don't mind mine thin). However, they have not tried it yet to see if they like it. I used about 1 teaspoon gluc for 1/2 gallon.
