This recipe calls for dried coconut flakes which are then ground into a flour-like meal. Store bought coconut flour is much more dense and concentrated, and won't work in this recipe. I'm so sorry you had to try it twice and still not get to eat these amazing muffins! Hopefully you can try it with the home ground flour. Light White Muffins are a recipe that calls for store bought flour. You can add blueberries to them as well.
Thanks Emily! I added LOTS more water,egg whites and coconut oil-not even sure how much Anyway, they came out ok. My kids loved 'em. They were sorta melt- in- your mouth;not much consistency to them. I may try again with grinding the coconut flakes.
delightx8: Is there any reason why I shouldn't add a full scoop of whey protein to the Singing Canary if I want to use it as a snack or meal replacement? So happy to find something for adrenal fatigue!
