I have tried to make these twice and both times they have not turned out I am using Bob's Red Mill coconut flour but when I add the wet ingredients the mixture is way to dry. What am I doing wrong?

This recipe calls for dried coconut flakes which are then ground into a flour-like meal. Store bought coconut flour is much more dense and concentrated, and won't work in this recipe. I'm so sorry you had to try it twice and still not get to eat these amazing muffins! Hopefully you can try it with the home ground flour. Light White Muffins are a recipe that calls for store bought flour. You can add blueberries to them as well.

Is there no way to salvage this once you've done the same(made w/bought coco. flour)?

You can try adding more liquid. I'm not sure how it will work. The store bought flour is a very different consistency.

Thanks Emily! I added LOTS more water,egg whites and coconut oil-not even sure how much Anyway, they came out ok. My kids loved 'em. They were sorta melt- in- your mouth;not much consistency to them. I may try again with grinding the coconut flakes.
