Don’t they look good? They taste even better. We all know noodles are notorious for fattening us up. Konjac noodles do the opposite. They help you drop pounds. They are made from the incredible Konjac root which has zero calories, zero carbs and zero fat. This allows them to be powerful destroyers of stubborn excess body weight.
Any of our Mamas here with challenging weight issues, please take notice of this post. Konjac noodles can be a huge help for your more tricky situation. If you have PCOS, thyroid issues or a body type that would rather cling to weight than drop it, they can come to your rescue in a yummy way. But even if you don’t have challenging weight issues, konjac noodles can delish up your dietary life and bring many health benefits to boot.
Despite their lack of numbers, these noodles boast a lot of health benefits. They positively affect your intestinal ecology, alkalize your body, help regulate your blood sugar, show cancer fighting abilities in studies and are a good source of minerals. But who cares about all that if they don’t taste good right? And to be honest, these noodles have the potential to either taste fantastic or completely nasty. It’s all in how you prepare them. Allow your mind to adjust to a different texture. They are chewier than flour based noodles but once you get used to it, there’s no going back!
The following is a Fuel Pull recipe that Serene and I have recently tweaked and perfected, constantly consulting with each other on ways to make it better. We’ll put it in our next book but because we love our face book friends here, we’re giving it to you first!
This recipe can make a quick one person serving ‘Mama lunch’ while your children eat PB and J on whole wheat bread or other healthy, child friendly food. Enjoy this meal a few times a week if you need to shed serious weight. If you prefer to keep things slow and steady or if you are exclusively nursing, have it a little less often or simply S it up by adding more fat i.e. quite a bit more oil than called for and/or replacing the egg whites with two full eggs.
We always want you to have ample protein with your meals so in this Fuel Pull recipe, egg whites serve the purpose well. They suit the noodles perfectly as they crisp up a little toward the end of cooking for an Asian cuisine feel. You could use chicken breast or lean beef instead if you desire, but the whites are the most Fuel Pull friendly.
Basic Ingredients: Konjac noodles * egg whites *soy sauce or Braggs Liquid Aminos * Celtic sea salt ( or any other sea salt) *black pepper * nutritional yeast * red pepper flakes or cayenne pepper * coconut oil or butter * sesame oil
1. Rinse and drain one or two packets of Konjac noodles in a colander. Please don’t be put off by the smell. It is due to the brine water they are packed in, they won’t taste like they smell once ready to eat.
2. Depending on your purism standards (ha ha), either microwave the noodles for 1-2 minutes or boil them in water for 1-2 minutes. Drain noodles again. This helps them release excess fluid.
3. Smear or spray a sauce pan lightly with a bit of oil and crack three egg whites into the saucepan (or use equal amount of carton whites). Season them with a little sea salt and black pepper. Let the egg whites set and turn from opaque to white.
4. Once the whites have set completely, use your spatula and chop them up into smaller pieces, turning them and letting them cook more completely. Now push all the egg whites to one corner of the pan.
5. Add 1 tsp. of either coconut oil or butter to the middle of the pan and put a generous pinch of sea salt in the butter or oil. Let it heat up and bubble a little bit.
6. Add in your drained Konjac noodles and turn the stove eye to high. Drop a small handful (a tsp. or two) of nutritional yeast on top of the noodles, add a squirt or two of Braggs or soy sauce, enough red pepper flakes or cayenne to spice things up a little and optional garlic or onion powder.
7. After a couple of minutes, flip noodles over and combine the egg whites with the noodles. The noodles will not burn even though you are cooking them on high. Toss and turn them a bit and try to get a slight crisp on the whites and the noodles. The noodles will never crisp completely but frying them like this on high for several minutes improves their texture and helps decrease chewiness.
8. Just before serving, add ½ tsp. of sesame oil to the pan and toss the noodles well in it. This gives a great aroma and better flavor to the dish. You can up to one full tsp. or even more if you want to S the dish up and enhance flavor further but this starts to take you out of Fuel Pull mode.
9. Plate and enjoy. Oh yeah!
I hope you can find an Asian or international store nearby your home. If not, make a trip and stock up. Most Asian stores sell Konjac noodles but they are known as Yam noodles. They will be in the refrigerated section. You can buy them online at netrition.com or konjacfoods.com but they are less expensive at Asian stores. They usually come in bags of 7 oz. or 16 oz. Maybe the small bag might be enough for you. Sometimes I am filled up by one bag but quite often I will use two small bags or one large for my lunch. Much of the weight is water so don’t feel like a piggy if you use two bags.
