Maybe I am odd but I do not like the pancakes fresh- it is a texture issue. I ate one and froze the rest thinking at least they would be in there if I was desperate. Well I was desperate one night- leftover night. I toasted some and topped with some greek yogurt and fruit hoping to mask the mushy limpness of the pancake. Loved how the toaster made them crisp and they seemed even sweeter. I now make them to freeze and toast. Thought I would share in case anyone else had an issue with them. Great idea

Question about soaking the batter overnight... Shouldn't it have an acid medium to break down the phytates? Also, does Serene add ALL the ingredients in the night before? I usually wait to add sweetener & ESP baking powder till I'm ready to bake/cook.

These pancakes have become a regular in our home. My husband and five children love them, I've served them to both my parents and parents-in-law, and they all loved them too! What's not to love about them. They fill you up, they keep you going for hours and they taste fantastic - especially with the greek yoghurt and berries. I think they were just what we were looking for, to add a bit of variety to our breakfast routine. Thanks Pearl and Serene!

These pancakes have become a regular in our home. My husband and five children love them, I've served them to both my parents and parents-in-law, and they all loved them too! What's not to love about them. They fill you up, they keep you going for hours and they taste fantastic - especially with the greek yoghurt and berries. I thought I saw a facebook post saying the recipe in the book had a mistake but I can't seem to find the post now. My pancakes are flat. I must be doing something wrong.

The pancakes will often end up flat unless you leave off adding the baking powder until after everything is already well blended. Try adding it at the very end, and blending very gently for just a few seconds to mix it in. They should puff up more then.

So, I put off making these cause I just couldn't imagine eating pancakes without butter or syrup. The thought of replacing those items with plain yogurt and fruit was even more of a turn off.
I'm starting my 3rd week on plan and decided today to give them a try.
Oh my!!!! WoW!!!! Who needs butter and syrup....LOL!!! These were AMAZING and the yogurt and fruit made them even better. I'm excited to make these one day when my hubby is home so he can try.
He made a pancake a long time a go that called for oats and cottage cheese but I don't remember him blending it and it was lumpy and "tolerable". He is going to LOVE these.
And I am also surprised at how filling they are. I know when I ate regular pancakes with syrup and butter I had to have some eggs or I'd get hungry again really soon.
I have found a new "treat".

I have to laugh cause as I was on a "date" with my husband tonight I could not stop talking about these pancakes. Guess I'll be making them again tomorrow so he can try.
