Hi! It's been a while since I've been on the forum, but I have a question to ask: can someone give me the recipe for loaded fotato soup? I think,(one eye closed), it's on pg. 275. My mom's copy of THM is being lent out to a friend currently. Longest week of my life! ;)Thanks in advance!

OK, here's how it goes:
Put 1/2 of a 12 oz bag of frozen cauliflower in a pot, and add 1 1/2 - 2 cups fat free chicken broth. Bring to a boil then simmer until tender. I put the lid on for this part. Puree in a blender, and return to saucepan. Add 1 light Laughing Cow cheese wedge, and sprinkle in some nutritional yeast, onion or garlic powder, sea salt, black pepper, and a dash of cayenne pepper. Add 2 tsp. turkey bacon bits. Thicken soup to desired consistency by slowly sprinkling in some gluccie while whisking briskly. Garnish with optional green onion.
Sometimes I use a Tbsp of Parmesan in place of the Laughing Cow wedge.
And that's it!

Can I use broccoli? We don't do much cauliflower. Sarah

You can certainly use broccoli if you wish, but it will not be like a potato soup anymore, and will have a green color and stronger flavor. If you don't mind this, then you can definitely make a soup with broccoli. The wonderful thing about this soup is that it doesn't really taste like cauliflower. It actually tastes very much like a real potato soup.
