Yesterday got messed up. I had my lunch warming in the oven. Packed my snack and went out the door and forgot my lunch! Realized it once I got to town! So my snack became my lunch and for a snack I found a salad bar in a store....with garbanzo beans! Got my E in! Just had try try dumplings in my turkey (not chicken) soup. They flopped, but the soup was still yummy. And made some (scones?) which I ate w/ strawberry sauce.

What does l.o. mean on some of your E meals? Also, what is your skinny choc cookie stuff? Sounds interesting.

Thinkspeak, l.o. is my abbreviation for leftover! (Most of the time you will notice I ate the same thing at a meal the day before.) The skinny chocolate cookie stuff...another experiment. I took 1/3 cup each oat fiber and almond meal, 2 Tbs. Beef gelatin, stevia and salt. Mixed and added 1/3 cup cold coconut oil cut in then 1 egg to combine. I pressed this into 2 5X7 dishes and baked. It made a very crispy crumble. I topped 1 dish with 1/2 recipe skinny chocolate with peppermint oil added, then topped with the crumbs from the other dish. It was o.k....

(E) WPP applesauce shake. Su. (E) tuscany in a bowl w/ quinoa This is one of those days before grocery shopping (I would go today...but my husband thought the roads too bad ). With a little extra planning and thought, I generally find there is something good to eat from the plenty in the house!
